Can’t get enough of the roasted curry cauliflower in our December salad? We’re sharing our in-house recipe so you can make it all year round.

Fun fact: curry powder lowers blood sugar and detoxifies the body, so you can snack guilt-free.

Ingredients:

  • 2 lbs cauliflower
  • 2 tbsp oil
  • 2 tbsp curry powder
  • 1 tsp salt

Directions:

  1. Preheat oven to 425 °F
  2. Clean cauliflower and cut into florets
  3. Toss in a bowl with oil + curry powder + salt
  4. Roast in oven for 25-30 minutes

Yields 5-6 servings.
